Crispy Baked Phyllo Feta Rolls with Honey and Sesame

Phyllo strips filled with crumbled feta, rolled tight, baked until crisp, and drizzled with warm honey and sesame seeds.

Ingredients
  

Filling
  • 200 g feta cheese crumbled
  • 2 tbsp honey for the filling
  • 1 tbsp fresh thyme leaves chopped, or 1 tsp dried
  • 1/4 tsp black pepper cracked
Rolls
  • 8 phyllo dough sheets sheets; about 200 g total, thawed
  • 4 tbsp olive oil for brushing
Topping
  • 3 tbsp honey warmed, for drizzling
  • 1 tbsp sesame seeds toasted, optional

Method
 

Prep
  1. Heat the oven to 200C/400F and line a 13 x 18 inch / 33 x 46 cm sheet pan with parchment paper.
  2. In a mixing bowl, crumble the feta and mix with 2 tbsp honey, thyme, and black pepper until combined.
Assemble the rolls
  1. Lay one sheet of phyllo on a clean surface with the short side facing you. Keep the rest of the stack covered with a damp towel so it doesn't dry out.
  2. Brush the sheet lightly with olive oil, then cut it in half lengthwise to make 2 long strips. Repeat with the remaining 7 sheets to get 16 strips total.
  3. Spoon about 1 tablespoon of the feta mixture onto the end of one strip. Fold the corner over and roll it up into a tight cigar shape, brushing the final seam with a little oil to seal.
  4. Place the roll seam-side down on the sheet pan. Repeat with the remaining strips and filling, spacing the rolls at least 1 inch apart so every side can crisp.
Bake and finish
  1. Brush the tops of all the rolls with the remaining olive oil.
  2. Bake for 15 to 18 minutes, until the phyllo is deep golden and crisp, checking after 12 minutes since ovens vary.
  3. While the rolls bake, warm the 3 tbsp honey in a small saucepan or in the microwave for about 15 seconds, until it's thin and pourable.
  4. As soon as the rolls come out of the oven, drizzle the warm honey over the top and sprinkle with sesame seeds. Serve warm.

Notes

  • Keep phyllo sheets covered with a damp towel, they dry out in minutes once exposed.
  • Don't skip brushing the seam with oil, it's what holds the roll shut in the oven.
  • Warm the honey before drizzling so it soaks into the rolls instead of sitting on top.
  • Space rolls apart on the pan so steam escapes and the layers stay crisp.
