Crispy Pan-Fried Greek Zucchini Fritters with Feta

Grated zucchini, squeezed dry and mixed with feta, egg, and herbs, then pan-fried until golden and crisp at the edges.

Ingredients
  

  • 500 g zucchini, grated about 2 medium-large
  • 1 tsp salt, for draining
  • 150 g feta, crumbled block feta, drained
  • 2 large eggs
  • 60 g all-purpose flour about 1/2 cup
  • 3 tbsp fresh dill, chopped
  • 2 tbsp fresh mint, chopped optional
  • 3 green onions, sliced
  • 1/4 tsp black pepper
  • 4 olive oil, for frying -5 tbsp

Method
 

  1. Grate the zucchini on the large holes of a box grater. Toss with 1 tsp salt in a colander set over a bowl and let it sit for 15 minutes to draw out the water.
  2. Working in batches, squeeze the grated zucchini hard in a clean kitchen towel until barely any liquid drips out. This step matters, skip it and the batter turns thin and won't hold together in the pan.
  3. In a mixing bowl, combine the squeezed zucchini, crumbled feta, eggs, flour, dill, mint, green onions, and black pepper. Mix until you get a thick, scoopable batter.
  4. Heat 3 tbsp olive oil in a 12-inch nonstick skillet over medium heat until it shimmers.
  5. Scoop about 2 tbsp of batter per fritter and drop into the hot oil, flattening slightly with the back of the spoon. Fry 4 to 5 at a time so you don't crowd the pan.
  6. Cook for 3 to 4 minutes per side, until deep golden brown and set in the middle. Flip once with a slotted spatula.
  7. Transfer cooked fritters to a paper towel-lined plate. Add more oil to the skillet between batches as needed and repeat with the remaining batter.
  8. Serve warm or at room temperature, with tzatziki and a lemon wedge on the side.

Notes

  • Squeeze zucchini until barely any liquid remains for crisp fritters.
  • Fry in batches so the oil temperature doesn't drop too low.
  • Use a slotted spatula to flip fritters without breaking the edges.
  • Taste one fritter before frying the rest, feta varies in saltiness.
