Fresh Cucumber Tomato Feta Salad with Lemon and Herbs

Ingredients
  

For the Salad
  • 2 English cucumber medium (about 400 g); diced
  • 3 tomatoes medium (about 450 g); diced
  • 1/2 red onion small (about 50 g); thinly sliced
  • 200 g feta cheese cut into cubes
  • 1/3 cup kalamata olives / 50 g; pitted and halved, optional
  • 2 tbsp fresh parsley or dill chopped
For the Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp red wine vinegar optional
  • 1 tsp dried oregano
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper

Method
 

  1. Cut the cucumbers and tomatoes into bite-size pieces, about 1.5 cm / 1/2 inch cubes. Place them in a 4-quart / 3.8 L mixing bowl.
  2. Add the sliced red onion and olives to the bowl with the cucumber and tomato.
  3. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper until combined.
  4. Pour the dressing over the vegetables and toss gently to coat everything evenly.
  5. Let the salad sit for 10 minutes at room temperature so the flavors blend and the onion softens slightly.
  6. Add the feta cubes and chopped parsley or dill. Fold gently once or twice, just enough to combine, so the feta doesn't break apart.
  7. Taste and adjust salt, keeping in mind the feta and olives already add a salty note.
  8. Serve right away, or within 1 hour, spooning any dressing from the bottom of the bowl back over the top.

Notes

  • Cut vegetables into similar size pieces so every bite has cucumber, tomato, and feta.
  • Add feta last and fold gently so it doesn't turn mushy.
  • Taste before adding extra salt, feta and olives are both salty.
  • Serve cold or at room temperature, not hot.
