Pan-Fried Halloumi and Avocado Breakfast Pitas with Egg

Warm pitas filled with pan-fried halloumi, mashed avocado, a soft fried egg, and cherry tomatoes, ready in about 30 minutes.

Ingredients
  

Avocado mash
  • 2 ripe avocados halved and pitted
  • 1 lemon, juiced (about 2 tbsp)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Halloumi and eggs
  • 250 g halloumi block sliced into 8 pieces, about 1 cm thick
  • 2 tbsp olive oil divided
  • 4 large eggs
To assemble
  • 4 pita breads about 60 g each
  • 150 g cherry tomatoes halved
  • 2 tbsp fresh mint, chopped or cilantro
  • 1/4 tsp chili flakes plus more to taste

Method
 

Make the filling
  1. Scoop the avocados into a mixing bowl and mash with a fork until mostly smooth. Stir in the lemon juice, salt, and black pepper.
  2. Pat the halloumi slices dry with a paper towel. This helps them brown instead of steaming in the pan.
  3. Heat 1 tbsp olive oil in a 25 cm / 10-inch nonstick skillet over medium heat. Add half the halloumi slices in a single layer and cook for 2 to 3 minutes per side, until golden brown. Repeat with the remaining halloumi and set aside.
  4. Wipe out the skillet and add the remaining 1 tbsp olive oil. Crack in 2 eggs at a time to avoid crowding, and cook for 3 to 4 minutes, until the whites are fully set and the yolks are still soft. Repeat with the last 2 eggs.
Warm the pitas and assemble
  1. Warm the pitas in a dry skillet or toaster for 20 to 30 seconds per side, until soft and lightly toasted. Slice open one edge of each to form a pocket.
  2. Spread the mashed avocado inside each warm pita.
  3. Tuck 2 slices of halloumi and one fried egg into each pita, then add a few halved cherry tomatoes.
  4. Sprinkle with chopped mint, a pinch of chili flakes, and extra black pepper. Serve right away while the pita is warm and the egg yolk is still soft.

Notes

  • Don't skip drying the halloumi, wet cheese won't brown properly.
  • Cook the eggs just before assembling so the pitas stay warm.
  • Taste the avocado mash before adding salt, halloumi is salty on its own.
  • Fry halloumi in a single layer, crowding cools the pan and stops browning.
