Seared Halloumi and Fresh Fig Toast with Honey Drizzle

Ingredients
  

  • 4 slices sourdough bread about 1.5 cm / 0.6-inch thick
  • 250 g halloumi cut into 4 slices, about 1.5 cm thick
  • 2 tbsp olive oil for toasting and searing
  • 4 fresh figs medium; quartered
  • 2 tbsp honey plus extra for drizzling
  • 2 tbsp walnuts chopped and toasted, optional
  • 1 tsp fresh thyme leaves plus extra for garnish
  • black pepper to taste; freshly cracked
  • flaky sea salt small pinch; optional, halloumi is already salty

Method
 

  1. Heat 1 tbsp olive oil in a 25 cm / 10-inch skillet over medium heat. Add the bread slices and toast for 2 minutes per side, until golden and crisp. Remove and set aside.
  2. Wipe out the skillet and add the remaining 1 tbsp olive oil. Heat over medium heat, then add the halloumi slices in a single layer without crowding them.
  3. Sear the halloumi for 2 to 3 minutes per side, until a deep golden crust forms on both sides. Remove from the pan right away so it doesn't turn rubbery.
  4. While the halloumi cooks, quarter the figs with a sharp knife.
  5. Lay the toasted bread slices on a board or plates. Top each slice with one piece of seared halloumi.
  6. Arrange the fig quarters over the halloumi, pressing them gently into the warm cheese.
  7. Drizzle honey over each toast, about 1/2 tbsp per slice.
  8. Scatter the thyme leaves, chopped walnuts, and a crack of black pepper over the top. Add a small pinch of flaky salt only if the toast needs it.
  9. Serve right away while the halloumi is still warm and soft in the center.

Notes

  • Sear halloumi in a lightly oiled pan; it releases some moisture as it cooks.
  • Don't overcrowd the skillet, or the halloumi steams instead of browning.
  • Taste before adding extra salt, since halloumi is already salty.
  • Build the toast just before serving so the bread stays crisp.
