Silky Greek Skordalia Garlic Potato Dip with Olive Oil

A smooth Greek potato dip made with mashed potatoes, raw garlic, olive oil, and lemon juice, served cold or at room temperature with bread.

Ingredients
  

  • 900 g Yukon gold potatoes (about 4 medium); peeled, cut into 5 cm / 2-inch chunks
  • 5 garlic cloves large; peeled
  • 1 1/4 tsp salt plus more to taste
  • 150 ml extra virgin olive oil / 2/3 cup
  • 2 tbsp fresh lemon juice
  • 1 tbsp white wine vinegar optional
  • 2 reserved potato cooking water to 4 tbsp; as needed
  • 1 tbsp fresh parsley chopped; optional, for garnish

Method
 

  1. Put the potato chunks in a 3-quart / 2.8 L saucepan and cover with cold water by 5 cm / 2 inches. Add a pinch of salt.
  2. Bring to a boil over high heat, then lower to a simmer. Cook for 20 to 25 minutes, until a knife slides into the potatoes with no resistance.
  3. Reserve 1 cup of the cooking water, then drain the potatoes. Let them sit for 2 minutes so extra moisture steams off.
  4. While the potatoes cook, mash the garlic and 1 1/4 tsp salt into a smooth paste using a mortar and pestle, or grate the garlic finely and mash it with the flat of a knife.
  5. Mash the warm potatoes with a potato masher until smooth. Don't use a food processor, it turns the starch gluey and the dip loses its texture.
  6. Stir the garlic paste into the mashed potatoes until evenly mixed.
  7. Drizzle in the olive oil a little at a time, stirring constantly, until it's fully absorbed and the mixture looks glossy.
  8. Add the lemon juice and vinegar and stir until combined.
  9. Loosen the dip with 2 to 4 tbsp of the reserved potato water, a tablespoon at a time, until it's smooth and thick enough to hold its shape on a spoon.
  10. Taste and add more salt if needed. Transfer to a bowl, drizzle with a little extra olive oil, and scatter parsley on top before serving.

Notes

  • Mash potatoes while still warm for the smoothest texture.
  • Add oil gradually so it doesn't pool or separate.
  • Taste garlic paste before adding, it gets sharper as it sits.
  • Use starchy potatoes, not waxy ones, for the best mash.
