Smoky Roasted Carrot Hummus with Crumbled Feta Dip

Jump to Recipe

Roasted Carrot Hummus with Feta is a smoky, sweet twist on regular hummus, in the same spirit as a smoky roasted eggplant dip. Roasting the carrots first brings out their natural sugar, so the dip tastes rounder and less flat than plain chickpea hummus.

The texture stays smooth thanks to tahini and a splash of the chickpea liquid. Crumbled feta on top adds a salty bite that balances the sweetness of the carrots.

I make this when I want something a little different for a snack board. It’s simple: roast the carrots, blend everything in a food processor, then finish with feta and a drizzle of olive oil.

You don’t need anything fancy for this recipe. A sheet pan, a food processor, and about 50 minutes from start to finish, most of it hands-off roasting time.

Why You’ll Love This Recipe

  • Roasting the carrots adds natural sweetness and depth
  • Feta on top gives a salty, tangy contrast
  • Made in one food processor, minimal cleanup
  • Good for meal prep, keeps well for days

Ingredient Notes

  • carrots: Choose medium carrots that roast evenly. Thicker ones may need a few extra minutes in the oven.
  • chickpeas: Canned chickpeas save time. Save the liquid before draining, it thins the hummus later.
  • tahini: Stir tahini well before measuring since it separates in the jar and settles at the bottom.
  • lemon juice: Fresh lemon juice tastes brighter than bottled and balances the sweetness of the carrots.
  • ground cumin: Toast the cumin briefly in a dry pan first for a deeper flavor, though it’s not required.
  • smoked paprika: Regular paprika works too, but smoked paprika adds more depth to the roasted flavor.
  • feta: Block feta in brine has better texture than pre-crumbled feta, which can taste dry.
  • olive oil: Use a decent olive oil for the topping since it’s tasted raw, not just cooked.
  • garlic: Roasting the garlic whole in its skin mellows the sharp bite you get from raw garlic.

Ingredients

For the roasted carrots
  • 500 g carrots peeled, cut into 2 cm chunks
  • 2 garlic cloves unpeeled
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
For the hummus
  • 1 can chickpeas (400 g); drained, liquid reserved
  • 3 tbsp tahini
  • 2 tbsp lemon juice fresh
  • 2 tbsp olive oil
  • 1/2 tsp salt to taste
For the topping
  • 60 g feta crumbled
  • 1 tbsp olive oil for drizzling
  • fresh parsley small handful; chopped
  • pinch chili flakes optional
  • 1 tbsp toasted pine nuts or sesame seeds optional

Method

Roast the Carrots and Garlic
  1. Heat the oven to 200 C / 400 F. Line a sheet pan 33 x 46 cm / 13 x 18 inch with parchment paper.
  2. Toss the carrot chunks and unpeeled garlic cloves with 3 tbsp olive oil, cumin, smoked paprika, and 1/2 tsp salt directly on the pan.
  3. Roast for 25 to 30 minutes, turning once, until the carrots are fork-tender and caramelized at the edges.
  4. Let the pan cool for 5 minutes. Squeeze the roasted garlic out of its skin into a small bowl and discard the papery skin.
Blend the Hummus
  1. Add the roasted carrots, garlic, chickpeas, tahini, lemon juice, 2 tbsp olive oil, and remaining 1/2 tsp salt to a food processor.
  2. Blend for 2 to 3 minutes, scraping down the sides once, until smooth. If the hummus looks stiff, add the reserved chickpea liquid or water 1 tbsp at a time until creamy.
  3. Taste and adjust the salt or lemon juice. Feta is salty, so hold back on extra salt until you've added the topping.
Assemble and Serve
  1. Spread the hummus into a shallow bowl and swirl the surface with the back of a spoon.
  2. Drizzle with the remaining 1 tbsp olive oil and scatter crumbled feta, parsley, chili flakes, and toasted pine nuts or sesame seeds over the top.
  3. Serve right away with warm pita or vegetables, or chill and serve cold.

Notes

  • Roast garlic unpeeled alongside carrots for a mellow, sweet flavor.
  • Let carrots cool 5 minutes before blending so the hummus doesn't turn gummy.
  • Add feta right before serving, not before storing, to keep the topping fresh.
  • Blend at least 2 minutes for a smooth texture, scraping the bowl once.

Tips for Success

  • Cut the carrots into even 2 cm chunks so they roast at the same rate and don’t burn at the edges.
  • Squeeze the roasted garlic straight from its skin, it turns soft and sweet after 25 minutes in the oven.
  • Save the chickpea liquid before draining, it thins the hummus without watering down the flavor.
  • Taste before adding extra salt, feta is salty on its own and can easily overpower the dip.
  • Warm the pita bread right before serving, cold bread makes the dip taste flat by comparison.

Variations

  • Swap feta for goat cheese if you want a creamier, less salty topping on the hummus.
  • Add 1/2 tsp harissa paste to the blender for a spicier, deeper roasted carrot hummus.
  • Use roasted red peppers instead of half the carrots for a sweeter, smokier version of the dip.

Storage and Reheating

Roasted Carrot Hummus with Feta keeps for 4 to 5 days in an airtight container in the fridge. The flavor actually gets better after a day, once the cumin and roasted carrot have more time to blend together.

This dip is meant to be served cold or at room temperature, so there’s no need to reheat it. If it firms up in the fridge, stir in a splash of water or olive oil to loosen it before serving.

You can freeze the plain hummus base without the feta topping for up to 2 months. Thaw it in the fridge overnight, stir well, then add fresh feta and a new drizzle of olive oil before serving.

Serving Suggestions

Roasted Carrot Hummus with Feta works well as part of a mezze spread, next to olives, a roasted red pepper and feta dip, warm pita, and marinated vegetables.

I also spread it on sandwiches instead of mayonnaise, or spoon a big dollop next to grilled chicken pita bowls, lamb, or roasted vegetables for a simple dinner.

For a snack, serve it with cucumber sticks, bell pepper strips, or crackers. It holds up fine at room temperature for a few hours, so it’s good for a lunchbox too.

FAQ

Why is my roasted carrot hummus grainy instead of smooth?

Grainy hummus usually means it needs more blending time or more liquid. Run the food processor for 2 to 3 minutes longer, scraping down the sides, and add the reserved chickpea liquid or water one tablespoon at a time until the texture turns creamy. Cold tahini can also seize up, so let it come to room temperature first.

Can I use raw carrots instead of roasted carrots for this hummus?

I don’t recommend it, raw carrots stay firm and taste flat next to the tahini and chickpeas. Roasting at 200 C / 400 F for 25 to 30 minutes softens the carrots and caramelizes their natural sugar, which is what gives this hummus its rounder, sweeter flavor. Skipping that step changes the dish.

How long does roasted carrot hummus with feta keep in the fridge?

It keeps for 4 to 5 days in an airtight container in the fridge. The color may deepen slightly as it sits, that’s normal. I like to add the feta and olive oil drizzle right before serving instead of storing it mixed in, so the topping stays fresh looking.

What can I dip into roasted carrot hummus with feta?

Warm pita bread, toasted flatbread, or raw vegetables like cucumber, cauliflower, and bell pepper strips all work well. I also spread it on sandwiches instead of mayonnaise, or spoon it next to grilled chicken or roasted vegetables as part of a bigger plate.

Is roasted carrot hummus with feta gluten free?

Yes, the hummus itself is gluten free since it’s made from carrots, chickpeas, tahini, and feta. Just check the label on your feta and make sure whatever you serve it with, like pita or crackers, is also gluten free if that matters to you.

Can I leave out the feta to make this hummus dairy free?

Yes, just skip the feta and the hummus stays dairy free without changing the base recipe. You’ll lose the salty, tangy topping though, so add a little extra salt and lemon juice to the dip itself, and maybe a sprinkle of toasted seeds for crunch instead.
