Roasted Lemon Garlic Chicken Thighs with Potatoes and Beans

Jump to Recipe

Lemon garlic chicken with potatoes and green beans is a sheet pan dinner. Bone-in chicken thighs, baby potatoes, and green beans roast together at 220 C / 425 F, and you only need about 40 minutes of oven time.

The chicken skin turns golden and crisp. The potatoes are soft inside with browned edges, and the beans wrinkle a little and pick up the lemony pan juices. The flavor is bright and garlicky without being sharp.

I use thighs because they stay juicy even if they sit in the oven a few minutes too long. Breasts dry out much faster here.

You’ll need two sheet pans so nothing steams. Half the garlic goes on after roasting so it stays fresh and bright. It’s a good recipe for a busy weeknight, and parchment keeps cleanup easy.

Why You’ll Love This Recipe

  • Everything roasts at the same temperature in one oven
  • Bone-in thighs give crisp skin and juicy meat
  • Only 15 minutes of hands-on prep, plus a short rest
  • Lemon and garlic make a quick sauce with no extra pot

Ingredient Notes

  • Chicken thighs: Pick thighs that are about the same size so they finish together. Chicken drumsticks also work and take about the same time.
  • Baby potatoes: Yukon Gold or red baby potatoes both work. If any are larger than a golf ball, quarter them so they cook at the same speed.
  • Lemons: Zest both lemons before you juice them, since a squeezed lemon is hard to zest. Fresh juice tastes brighter than bottled.
  • Green beans: Fresh beans roast best. Frozen beans release water and turn soft, so I skip them here.
  • Dried oregano: You can use 1 tbsp fresh thyme leaves instead. Rub dried oregano between your fingers first to wake it up.

Ingredients

Chicken and marinade
  • 8 bone-in, skin-on chicken thighs (about 1.2 kg / 2.6 lb); patted dry
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 lemons zest of both, juice of 1 (about 3 tbsp)
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
Vegetables
  • 700 g baby potatoes halved, quartered if larger than a golf ball
  • 350 g green beans trimmed
  • 3 tbsp olive oil 2 tbsp for the potatoes, 1 tbsp for the beans
  • 1 tsp kosher salt 3/4 tsp for the potatoes, 1/4 tsp for the beans
  • 1/4 tsp black pepper
To finish
  • 3 cloves garlic minced
  • 3 tbsp lemon juice from the second lemon
  • 2 tbsp fresh parsley chopped

Method

  1. Heat the oven to 220 C / 425 F with racks in the upper and lower thirds. Line two 33 x 46 cm / 13 x 18 inch sheet pans with parchment.
  2. In a large bowl, whisk 2 tbsp olive oil, the zest of both lemons, the juice of 1 lemon, 3 minced garlic cloves, the oregano, 1 tsp salt, and 1/2 tsp pepper. Add the dry thighs and rub the marinade over the meat and under the skin. Let them sit for 15 minutes while the oven heats. Only half the garlic goes in now, because minced garlic scorches in a 220 C oven and turns bitter.
  3. In a second bowl, toss the potatoes with 2 tbsp olive oil, 3/4 tsp salt, and 1/4 tsp pepper. Divide them between the two pans, cut-side down. Set 4 thighs skin-side up on each pan, leaving a little space around each piece.
  4. Roast for 25 minutes, swapping the pans between racks after about 12 minutes, until the chicken skin starts to turn golden.
  5. Toss the green beans with 1 tbsp olive oil and 1/4 tsp salt. Pull the pans out, scatter half the beans on each pan, and roast for 15 minutes more. The chicken is done when the skin is deep golden, a fork slides easily into a potato, and a thermometer in the thickest part of a thigh, not touching bone, reads 175 F / 80 C.
  6. Stir the remaining garlic and the parsley into the juice of the second lemon. Spoon it over the hot chicken and vegetables, and serve right away with the pan juices.

Notes

  • Zest both lemons before juicing, because a squeezed lemon is hard to zest.
  • Use two sheet pans so the chicken and potatoes brown instead of steam.
  • Save half the garlic for the end, so it doesn't turn bitter in the oven.
  • Check thighs at 175 F / 80 C in the thickest part, away from the bone.

Tips for Success

  • Pat the chicken dry with paper towels before it goes into the marinade, so the skin browns instead of steaming.
  • Cut any larger potatoes into pieces about 4 cm wide so they all turn soft in the same 40 minutes.
  • Use two sheet pans and leave a little space around each thigh, or the pieces will steam and the skin won’t crisp.
  • Check the thickest part of a thigh, away from the bone, and look for 175 F / 80 C before you pull the pans.
  • Serve within 15 minutes of leaving the oven, since the skin starts to soften as it sits in the pan juices.

Variations

  • Swap the green beans for asparagus spears and add them for only the last 10 minutes, since they cook faster.
  • Add 1 tsp smoked paprika and a pinch of chili flakes to the marinade for a warmer, slightly smoky flavor.
  • Replace the oregano with 1 tbsp chopped fresh rosemary or thyme for a more woodsy flavor.

Storage and Reheating

Leftover lemon garlic chicken and vegetables keep in an airtight container in the fridge for 3 to 4 days. Don’t leave the pans out at room temperature for more than 2 hours before packing them up.

To reheat, spread the chicken and potatoes on a sheet pan and warm them in a 190 C / 375 F oven for 15 to 20 minutes, until steaming hot in the center. The oven brings the skin back to crisp. The microwave works in a pinch, but the skin turns soft, and the beans will be softer after reheating either way.

You can freeze the cooked chicken on its own for up to 2 months and thaw it overnight in the fridge. I don’t freeze the potatoes or beans because they turn mushy.

Serving Suggestions

Serve the chicken, potatoes, and beans straight from the pans, with a few spoonfuls of the lemony pan juices over the top. Put extra lemon wedges on the table.

The pans already hold chicken, potatoes, and beans, so you don’t need much else. A tomato and cucumber salad or a bowl of tzatziki adds something cool and fresh. Crusty bread is good for the juices.

Leftover chicken, pulled off the bone, is good in a sandwich or on top of a salad the next day.

FAQ

Why is the skin on my lemon garlic chicken soggy?

Soggy skin usually means the pan was crowded or the chicken was wet. Pat the thighs dry, set them skin-side up with gaps between them, and split everything across two sheet pans, because crowded pieces steam instead of brown. Check doneness at 175 F / 80 C in the thickest part.

Can I use chicken breasts instead of bone-in thighs?

Yes, but thighs stay juicier and forgive a few extra minutes in the oven, which is why I use them. Boneless breasts cook faster, so add them after the potatoes have roasted for 15 minutes, then check them with a thermometer about 20 minutes later.

Can I prep lemon garlic chicken ahead and marinate it for hours?

You can prep it ahead, but keep the lemon juice out of a long marinade. Mix the oil, half the garlic, zest, oregano, and salt, coat the chicken, and refrigerate for up to 8 hours. Add the lemon juice 15 minutes before roasting, because acid left too long makes the meat texture mealy.

What goes well with lemon garlic chicken and potatoes?

A tomato and cucumber salad, a bowl of tzatziki, or crusty bread all go well with it. The pan already has chicken, potatoes, and beans, so I keep the sides light. Bread is good for soaking up the pan juices, which are my favorite part.

Is lemon garlic chicken with potatoes and green beans gluten free and dairy free?

Yes, as written the recipe is both gluten free and dairy free. It uses only chicken, potatoes, green beans, olive oil, lemon, garlic, and herbs, with no flour, butter, or soy sauce. If you serve tzatziki on the side, that part contains dairy, and check the label on any pre-seasoned chicken.

Do I need to peel the potatoes for lemon garlic chicken?

No, you don’t need to peel them. Baby potatoes have thin skin that turns crisp and holds the halves together, so just scrub them under running water and dry them. If your potatoes are larger than a golf ball, cut them into 3 to 4 cm chunks so they finish in the same 40 minutes.
